Bacalhau à Brás (or also Bacalhau à Braz) is a typical Portuguese dish of cod. Being one of the most popular dishes made with this fish, it consists of shredded cod, fried potato chips, thinly sliced fried onion, scrambled egg, olives and chopped parsley. The excellent taste depends on the ratio of the components of the recipe, mainly the amount of onion in relation to the cod and the oil used to make this dish.
According to what is known, the recipe was created by a tavern keeper from Bairro Alto, in Lisbon, called Brás and thus the name for this very special dish came up.
His popularity led him to cross the border with Spain, and it is sometimes possible to find him also on Spanish menus under designations like “revuelto de bacalao a la portuguesa” or “bacalao dorado”.
